Eggnog Stuffed Chocolate Cups and a Giveaway


Welcome to December here on Cakeyboi. It’s time to get those Christmas inspired recipes going.

And to start with these Eggnog Stuffed Chocolate Cups tie in with another brilliant giveaway. (Check out the lucky winner of the Chocolate hamper giveaway over on the Rafflecopter widget).

This time, the giveaway comes to you courtesy of Lakeland! They have supplied me with a set of goodies to get me making Christmas chocolates and they are offering a set for one lucky Cakeyboi visitor too.


I decided to make some simple chocolate Christmas shapes with a mould I was sent (I need practice with these as you can clearly see). 


Plus, I have also made delicious Eggnog Stuffed Chocolate Cups. The filling is made from a mixture of cream cheese, butter, icing sugar and added vanilla, rum flavouring and nutmeg. Perfectly safe for kids too, these choccies are so festive you will be singing Jingle Bells after you scoff them.


To make them I tempered some chocolate with my new thermospatula from Lakeland. I had never tempered chocolate before. To be honest it has always terrified me! But this spatula takes the temperature whilst it is melting and then when cooling down, so you know exactly what is going on!

I added a wee dot of white chocolate to my Lakeland swirl mould, let this set, then added the tempered chocolate and let this set whilst I made the eggnog flavour filling. I added this, chilled it then added a chocolate bottom, smoothing over with my new chocolate scraper.

The chocolates popped out with a bit of brute force and then I popped them in festive treat bags and added a homemade sticker, to hand out.

Eggnog Stuffed Chocolate Cups
Gooey eggnog flavour filling in a chocolate shell!
Ingredients
  • 300 grams 72% Dark Chocolate, finely chopped
  • 25 grams white chocolate
  • 113 grams full-fat cream cheese
  • 30 grams unsalted butter, very soft
  • 400 grams icing sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum flavouring
  • 1/4 teaspoon nutmeg
Instructions
Melt the white chocolate in a small bowl in the microwave. Dab little bits in the bottom of the mould. Pop in the fridge and allow to set. Place 225 grams of the dark chocolate in a bowl over a pan of simmering water. Don’t let the base of the bowl come into contact with the water. Melt the chocolate slowly with your thermospatula until it reaches 48C (if using milk chocolate that would be 45C). Remove from the heat and add the remaining 75 grams. Stir this in and keep stirring until it has melted and the temperature reads 32C (30C for milk chocolate). Pour the molten chocolate into the swirl moulds and drain away any excess. Use your scraper to smooth the top of the mould. Cool for 15 minutes at room temperature, then in the fridge for 15 minutes. Make the filling by beating together the butter, cream cheese and icing sugar until smooth. Lastly add the vanilla, rum extract and nutmeg stirring through. Transfer to a piping bag or food bag with a corner snipped off and pipe into the set chocolates. Place into the fridge for 10 minutes and re-melt the remaining chocolate. Add a little to the top of each mould, this will be the base of each chocolate when turned out. Using your scraper smooth over again. Place into the fridge to cool, for at least an hour then remove from the moulds. I did this by whacking them off the worktop. Enjoy the soft eggnoggy centre of these chocolates!

  18. Getting all Christmassy just reading this. Congrats on the chocolates. They seem shiny so the tempering must have gone well. Being Italian, I like panettone or panforte for Christmas dessert although Christmas pudding is still a must.

  34. It's not really a traditional Christmas dessert, but we always have a completely over the top raspberry pavlova as one pudding option on Christmas Day, my mouths watering just thinking about it!!!!!
