Read All About It! Cakeyboi hits the press, Capt. Cakeman returns and week one of GBBO!


If you don’t follow Cakeyboi on Facebook or Twitter you might have missed the fact that recently I was mentioned in my local press. Pauline, I think I might know what is going wrong here! I too had trouble with sloppy cream cheese frosting, until I realised I needed to use full-fat cream cheese ALWAYS! You need the fat content in the cream cheese to make the frosting more stable. Light cream cheese and you get a runny consistency. This is one area where you really can’t substitute something a wee bit healthier! I hope this has solved your issue Pauline. If not get back in touch and let me know!

  1. Thank goodness for Captain Cakeman, as you may know I substitute a lot of ingedients for free from versions and can confirm that Lactofree cream cheese, though delicious, doesn't work for this!

    Congrats on your 15 minutes of fame too x

  3. Very good tip on the cream cheese frosting, I have realised that full fat is always better too! I hope they don't change the judges next year, it wouldn't be the same without Mary and Paul!

  4. Who's to say it will only be 15 minutes of fame...this could be the start of world domination!

    Personally, I'm rather hoping they do change the judges...I've never fallen for the 'charms' of Mr H!
